Edition 1: 8-Year Small Batch Kentucky Straight Bourbon Whiskey

Our inaugural release is an 8-Year Small Batch Kentucky Straight Bourbon Whiskey, crafted from two barrels. One distilled in Bardstown and aged in a medium-char ISC barrel; the other in Owensboro, in a Kelvin barrel at level 4 char. Both are high-rye bourbons. Both brought something distinct to the blend.

Marrying

We married the barrels at Castle & Key outside Frankfort — the historic Colonel E. H. Taylor distillery, built in 1887 — and after sitting at combined barrel proof for a few weeks with some oxygenation every few days, we then proofed the whiskey down slowly over another week before bottling. The result is a release of 380 bottles.

The taste

Nose
Toasted oak and walnut, with some rich rye notes, chocolate and warm bakery and pastries, vanilla and caramel, leather, coffee and tobacco, subtle banana, peach and blackberry.
Palate
Toasty oak, spicy rye, chocolate, pastries and honey, some liquorice. The fruit is more apricot and orange with clove spice. Rich, round and long. Warm and inviting.
Finish
Builds slowly to a long finish with wood tannins and dark bramble fruits, full and with good acidity. Very smooth and well rounded up front, with great volume that stays and builds through the mid-palate to a warm, inviting finish.
